Simonini Cooked Ham, or Proscuitto Cotto, “cotto” meaning “cooked”, originated in Emilia-Romagna, home of Parmigiano Reggiano cheese and the world’s finest balsamic vinegar.
It is made by brining the pork ham with a flavour-packed brine of aromatic herbs and seasonings, before it is slowly and gently steamed to conserve its moisture.
Serve it thinly sliced on a meat and cheese platter, or in a grilled panini with some burrata, tomatoes and a smear of basil pesto. You can’t go wrong.
