Ford Farm’s Dorset Red Smoked Cheddar is created by following the traditional Cheddar-making process, except that the heat of the milk is lowered and less stirring is done, resulting in a milder flavour and creamier texture.
After pressing into a block and maturing for three months, it is cold-smoked over oak chips overnight, giving it a distinct mellow smoky flavour.
