The king of Italian charcuterie, Proscuitto Crudo is a dry-cured pork ham known for its intense flavour, deep red colour and streaks of delicious fat. It is never cooked, thus the name “Crudo” which means “raw”.
The leg of ham is first cleaned and salted, before being pressed, washed, and finally aged for up to 18 months to draw out all its moisture and concentrate its flavour. Try it on a meat and cheese platter, a salad, or in a crusty hunk of focaccia.
